We know a lot. A hell of a lot. People just refuse to believe that there are numerous things which factor into how the Egyptians look. I answered an ask on it here over a year ago, which you would find if you look in my FAQ. There isn’t a particular ethnic group the Egyptians are similar to because the civilisation, much like the Greek and Roman civilisations, are not ethnically or culturally homogenous and we have to stop thinking of them as distinct blocks. 

And before anyone asks, Egyptian art is like that™ because of art decorum. Rules governed how someone could be presented in art or statuary. Women are depicted as pale yellow and men as dark brown because art decorum says so. There’s always a fishing/fowling/hunting scene in a tomb because art decorum says it must be there to demonstrate control over chaos according to Ma’at.
